Nutrition in the vegetable and fruit skins

If only mother taught me to eat the skin of fruits and vegetables I would have been healthier. Now that we are exposed to knowledge - thanks to the Internet - I was amazed to know the kind of nutrition the skins possess.

The other day I washed the potatoes several times but retained the skin. It took me time to relish the taste of the potato with the skin but hope that I will soon learn to relish it. I fished out this info on the benefits of potata skin. The Net is loaded with info on other veg and fruit skins

I like vegetables from a glass jar, specifically banana peppers, olives, and jalapenos. They're very healthy and you feel the effects fast. They clean your liver and kidneys probably based on what I've observed.

I have no idea about 'glass jar' vegetables as my thread is about skins of fruits and vegetables. Can you explain a bit?
 
I understand the nutrition in vegetable and fruit skins, therefore, I eat apple with skin or pears with skin. However, some fruits cannot be just eaten for instance, how can someone eat jack fruit's skin or custard apple skin.
 
It's the excessive use of pesticides that makes me peel of the skin because it's not easy to wash off the pesticides with water. I even started to eat apple after removing it's skin.
